So customers can order the page based on things such as,

Neil,

I think it would be a bit tricky to add "sort by price" on the page you gave as an example, because that is listing products, and each of those products has multiple versions, which may have different prices (in your case it looked like the versions within each product have same price).

I guess it could work from the "from" price for the product, ie the price of the lowest version?

Yes this is good point Mart. Using the 'from' price would make sense. Would also be good if you could enable/disable it at category level.
