Hi,How do I change the text that says 'Sample Store' in the page headers to our logo?

Yeah, as Mart said, the documentation is good and will give you everything you need.
If you want a quick fix though, check what skin you are using 'Kartris' by default, the logo image will be in the images folder. you can replace that and then make some tweaks as required in the CSS
