Can you clarify for me what is meant by limited to 500 products please? 

Can products have more than one SKU (version) associated with it thus more than 500 SKUs?

The 500 limit applies to "versions", ie individual SKUs. You can allocate these how you wish (eg multiple versions per product, so long as the total number of versions/SKUs doesn't exceed 500).

The full licensed version of the software has no product limit of course - and can support a million or more SKUs with no performance problems.
