I'm wanting to add a feature so that my users can login to their accounts and actually post products to my Kartris system if they are approved to do so. Any suggestions on how to go about this?

Customers are handled differently than the Admins, and so they can't access any of the back-end features simply by logging in from front-end.
The only way to allow someone to add products is to create them as admins in the back-end and give them the products' permissions only, but still its a bit risky if they didn't trained well on that; anyway, that also means they will have a full control on attributes/options/promotions/categories/existing products and all other product related features.
