Is it possible to set up a voucher that can be sold in the shop and sent out as an eVoucher by email. 

I want to offer a free gift voucher for purchases over X amount. I think I should be using a voucher code so that the user can claim the gift voucher amount on the next purchase.

Any better ideas?

There is no way to automate this, but you can set it up manually of course. It only takes about 10 seconds to issue a coupon and send it to a customer.

How do you send a coupon to a customer. Is it a case of just emailing the code?

Yes, a coupon is just a code that the customer can enter during an order.

It might give either a fixed discount (eg $10) or a percentage discount. And it might be reusable (eg if it were for printing in a magazine you'd want many users to be able to use that code), or it might be single-use.

Normally you'd want a multiple-use coupon to be a percentage value... if it was a fixed value I might be able to break my order up into 2 or 3 orders, and get the fixed discount on each one - with a percentage discount it makes no difference.
