I want to change the category display to be a dropdown instead of a list where all categories are displayed. How do I do this? I can't seem to find it in the config settings.

Entering 'category' in the config settings page's search box will give you the list of config settings that contain 'category' in their name.
The config setting you're looking for is 'frontend.display.categorymenu.type'. You can set it from 'l' (list) to 'd' for dropdrown.
