I do not have the setting option for frontend.checkout.shipping.system in the backend! I guess that's the reason why shipping options aren't shown during checkout...
Anyone know how to fix?

Have you walked through the configuration in Regional Settings -> Shipping?

Shipping isn't set there globally anymore, the setting is deprecated.
Instead, you activate a shipping system from the plugins (payment and shipping gateways) in the back end. Then, when you create shipping bands you can set those to be handled by the shipping plugin rather than fixing a price for that band.
This is much more flexible as you can use combinations of different shipping, for example you could set UPS to handle orders up to a certain weight, and above that use the banded shipping price. Or you might only use UPS for the US, and put banded shipping for overseas destinations.

Thanks to all that tried to help, but I figured it out. Within the UPS settings, something was simply off. Once I re-entered the token, username, etc., it started working.
