For some reason we can't get the custom ordering of categories and subcategories to work.
In admin we can use the up/down buttons in a category to put the subcats in the right order. But if you then make any edit to any subcat, that subcat jumps DOWN to the bottom of the order list. This puts the list in the wrong order. So every time we edit a subcategory we have to reorder the list again which is a PAIN.
We are using the config setting frontend.categories.display.sortdefault = CH_OrderNo
What are we doing wrong here?

You are not doing anything wrong. Will fix in the next release, couple of files need to be changed.
